Ingredients:
*2-3 chicken breasts
*1 taco seasoning packet
*1 can chicken broth
*2 cups Mexican cheese (divided)
*1/2 cup sour cream
*1 can cream of chicken soup
*1 can enchilada sauce
*tortillas
Directions:
1.) in crock pot--cook chicken breasts with a can of chicken broth and a taco seasoning packet for 3-4 hours on high
2.) in a large bowl mix; 1 cup of Mexican cheese, sour cream, cream of chicken soup, and shredded (cooked) chicken (about 2 1/2 cups of chicken)
3.) fill tortillas with chicken mixture, roll up and put in 9 x 13 greased pan, seam side down
4.) cover enchiladas with a can of enchilada sauce and remainder of Mexican cheese
5.) bake at 350 for 30 mins (or until cheese is melted and center is warm)
Super Busy:
You can always make the chicken mixture the night before!
