Ingredients:
spicy breakfast sausage (I used Jimmy Dean)
8 oz can tomatoes (drained)
8 oz can of corn (drained)
3/4 cup water
taco seasoning packet
shredded Mexican cheese
sour cream
cooked rice
Directions:
1.) Cook sausage and drain off fat. Return meat to skillet.
2.) Add tomatoes, corn, water, and taco seasoning packet.
3.) Cook on medium/low until mixtured is cooked through.
4.) Serve over rice, topped with cheese and sour cream.
Side Note: The friend who created this recipe had the meat mixture mixed with eggs the next morning and said it was delish! My husband had some leftovers mixed with Mac 'n Cheese and liked that too.
