Crumble-Top Pumpkin Muffins

Ingredients:
*4 cups all-purpose baking mix
*1 cup raisins (optional)
*2/3 cup quick or old-fashioned oats
*2/3 cup granulated sugar
*1 tsp. ground cinnamon
*1 can (30 oz.) Libby's Easy Pumpkin Pie Mix
*2 eggs
*Streusel Topping (recipe below)

Directions:
1.)  Combine making mix, raisins, oats, sugar, nad cinnamon in a large bowl and mix well.
2.)  In a medium bowl, combine pumpkin pie mix and eggs; mix well.
3.)  Stir pumpkin mixture into oat mixture until moistened.
4.)  Spoon batter into 24 paper-lined muffin cups.
5.)  Sprinkle with Streusel Topping.
6.)  Bake at 400 for 14-16 mins.

For Streusel Topping:
Combine 3 tablespoons all-purpose flour, 3 tablespoons granulated sugar, and 3/4 teaspoon ground cinnamon in a small bowl.  Cut in 2 tablespoons butter with 2 knives until mixture is crumbly.

Side Note:
If you don't like raisins, I think this would taste good with a cup of chocolate chips as well!
